Cheesy Breakfast Quesadillas

Let’s talk really quick about the magic that is this hack I speak of… the egg literally cooks and then acts with the cheese as your glue to this perfect quesadilla. Fill them with any of your favorite proteins and veggies, and WAM-BAM-THANK-YOU-MOM – You have an amazing, filling and tasty breakfast in minutes! These not only can be made quickly and served immediately while still warm, these are awesome freezer friendly quesadillas that you can take out and warm up in less than 2 minutes and be on your way!

Be Prepared!
Literally your first step needs to be getting everything out and ready to go before you even start heating your skillet.
- Cook your bacon to your liking. I love to cook mine in the oven on my silpat silicone mat. I can cook up a whole sheet in 18 minutes in a 400 degree oven. If you are using already cooked slices or bits, I recommend portioning out about 3 Tbsp and warming in the microwave for 20-30 seconds.
- Have your eggs whisked up in a bowl, seasoned with salt and pepper.
- Have your tortilla out and ready to grab.
- And your cheese of choice shredded up or the bag opened and ready to taste test and grab when needed.

Building the Perfect Breakfast
In a large skillet on medium heat, spray pan with non-stick spray. Pour in your whisked eggs and tilt pan slightly to coat the bottom of your skillet.

Once the eggs are almost fully cooked, sprinkle with a bit of the cheese and then put your tortilla directly on top of the cheesy eggs. Warm just slightly.

Using a spatula, turn the whole tortilla/egg over. Sprinkle one half with your chopped up bacon, or protein of choice. Use the remaining cheese to sprinkle over the whole thing.

Using your spatula again, fold the tortilla over in half over the bacon. Leave to continue melting the cheese and crisping up your tortilla.

Flip over and crisp up the other side… TA-DA, a perfect Breakfast Quesadilla!

Serving
Allow to cool for a minute or two, then using a knife or pizza slicer, cut your quesadilla into wedges. Serve warm. These are amazing all on their own, but feel free to serve these up with some salsa, hot sauce or sour cream.
