Let’s talk really quick about the magic that is this hack I speak of… the egg literally cooks and then acts with the cheese as your glue to this perfect quesadilla. Fill them with any of your favorite proteins and veggies, and WAM-BAM-THANK-YOU-MOM – You have an amazing, filling and tasty breakfast in minutes! These not only can be made quickly and served immediately while still warm, these are awesome freezer friendly quesadillas that you can take out and warm up in less than 2 minutes and be on your way!
Literally your first step needs to be getting everything out and ready to go before you even start heating your skillet.
In a large skillet on medium heat, spray pan with non-stick spray. Pour in your whisked eggs and tilt pan slightly to coat the bottom of your skillet.
Once the eggs are almost fully cooked, sprinkle with a bit of the cheese and then put your tortilla directly on top of the cheesy eggs. Warm just slightly.
Using your spatula again, fold the tortilla over in half over the bacon. Leave to continue melting the cheese and crisping up your tortilla.
Flip over and crisp up the other side… TA-DA, a perfect Breakfast Quesadilla!
Allow to cool for a minute or two, then using a knife or pizza slicer, cut your quesadilla into wedges. Serve warm. These are amazing all on their own, but feel free to serve these up with some salsa, hot sauce or sour cream.
