Roasted Cabbage ‘Steaks’

I am excited to share with you one of my very favorite preparations of this highly underrated vegetable. Cabbage is used as an addition in so many recipes, but in this version, cabbage is the STAR. Stick with me here… my Husband tries all my food, and he told me after he tried it that he was secretly skeptical, but I knocked his socks off! This is such an easy recipe – and SO good for you too! Only about 10 calories, prepared. What is better than that?!

Ingredients
  • 1 Head of Green Cabbage (or Red if you prefer)
  • 1/4 cup Olive Oil (divided)
  • 1 tsp Garlic Powder
  • 1 tsp Sea Salt
  • 1/2 tsp Onion Powder
  • 1 tsp Paprika
  • 1/4 tsp Black Pepper
Instructions
  1. Preheat oven to 400°F. On a large baking sheet pan, drizzle of oil to slightly grease the surface.

  2. Slice cabbage into ‘steaks’, discarding the stem-end (slice about 1/4 inch thick)

  3. Place cabbage steaks onto the baking sheet in a single layer.

  4. In a bowl, combine your remaining olive oil and spices. Brush the mixture onto the steaks, coating well.

  5. Roast on the center rack for 40 minutes. Serve immediately.
