A summer salad staple – potato salad. I have never been a huge fan of the traditional mayonnaise-based potato salad. I wanted a version with more of a sweet heat, savory and that let each ingredient shine in every bite!

Oh boy, do I have a hit for you! This combination of veggies with the dressing is seriously so beyond what you can even imagine! The use of this salad is so versatile too – add some to a breakfast burrito with scrambled eggs and your favorite protein – YUM! Add some quick grilled chicken or steak and you’ve got yourself a main dish! This is one of those recipes that gets better with time too, so the leftovers (if you have any) are SO good for days after you make it.

Idea time! Breakfast Scramble – SO easy! Scrambled eggs, roasted sweet potato salad, topped with fresh cilantro, avocado and crumbled feta – MIND BLOWN!!!

The texture of this salad is so satisfying. The crunch of your fresh bell peppers, the sweet corn and the caramelized roasted sweet potatoes are just heavenly here! Trust me!

Instructions

  1. Roasting your Sweet Potatoes

    Preheat your oven to 400°F. Wash and then peel your sweet potatoes. Cut up into 1 inch pieces. Line your baking sheet with parchment paper. Drizzle your sweet potatoes with olive oil and roast for 30-45 minutes, until fork tender.

  2. Making your Honey Dijon Dressing

    In a small bowl or food processor, add all your ingredients for the Honey Dijon Dressing. Mix well and set aside.

  3. While your potatoes roast, prep your other veggies and seasonings in a large mixing bowl and set aside.

  4. When your potatoes are done, remove from the oven and let cool for 5-10 minutes. Then add the sweet potatoes to your large mixing bowl and drizzle in your Honey Dijon Dressing and toss well. Make sure ‘to taste test it

Note

This salad can be served warm or chilled. I prefer it chilled, so into the fridge it goes to let all those ingredients get to know one another. It’s pretty hard to resist revisiting the bowl more than once to ‘test’ it one more time. This is indeed a favorite in this house and is always a hit at picnics and barbecues!
